Baked Broccoli Tots

These little finger foods are both healthy and delicious! A perfect snack for a party or happy hour!

Ingredients

  1.  2 cups (12 oz) uncooked or frozen broccoli

  2.  1 large egg

  3.  1/4 cup yellow onion, diced

  4.  1/3 cup cheddar cheese, shredded

  5.  1/3 cup panko breadcrumbs

  6.  1/3 cup Italian breadcrumbs

  7.  2 tablespoons parsley

  8.  1 teaspoon salt

  9.  1 teaspoon pepper

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 20 tots

Directions

  • Preheat oven to 425 degrees. Grease a baking sheet with a thin layer of oil or line with parchment paper and set aside.

  • Blanch the broccoli in boiling water for 1 minute, then remove and shock with cold tap water to stop the cooking process. Drain well.

  • Chop broccoli finely and mix thoroughly with the egg, onions, cheddar, breadcrumbs, and seasoning.

  • Scoop about 1.5 tablespoons of mix using a spoon or your hands and gently press between your hands into a firm ball, then shape into a tot shape. *Helpful hint* wash your hands every few tots to keep them from sticking to your hands. Place formed tots onto the prepared baking sheet.

  • Bake until golden brown and crispy, around 18-24 minutes, turning half way. Remove from the oven and enjoy with ketchup, siracha, ranch or your favorite dipping sauce!
