Italian Sausage Tomato Orzo Soup

This is a filling soup, but still is light and dairy free. Only takes about 30 minutes to make, and is quite delicious!

Ingredients

  1.  1 tablespoon olive oil

  2.  1/4 pound Italian sausage, no casings, rolled into bite-sized balls

  3.  1/4 cup red or yellow onion

  4.  2 cloves garlic, finely chopped

  5.  1 stalk celery, finely chopped

  6.  1/2 cup whole wheat orzo pasta

  7.  1.5 cups reduced-sodium chicken broth

  8.  1.5 cups water

  9.  15 oz can diced tomatoes

  10.  1/2 tablespoon Italian seasoning

  11.  1/2 teaspoon salt

  12.  1/2 teaspoon black pepper

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 4 servings

Directions

  • In a large soup pot on medium-high flame, heat olive oil for 1-2 minutes.

  • Add sausage pieces and sauté until lightly browned; transfer cooked pieces to a plate and set aside.

  • To the heated, oiled pan, add onion, garlic, and celery; sauté until fragrant and slightly tender, stirring often for 4-5 minutes.

  • Add orzo; sauté to lightly brown, 2-3 minutes.

  • Add chicken broth, diced tomatoes (with their juice), Italian seasoning, salt and pepper.

  • Bring to a boil; continue boiling until pasta is cooked through (about 10 mins.); add sausage back to pot about halfway through the boiling process.

  • Serve warm and enjoy!
