Italian Sausage Tomato Orzo Soup
This is a filling soup, but still is light and dairy free. Only takes about 30 minutes to make, and is quite delicious!
Ingredients

1 tablespoon olive oil

1/4 pound Italian sausage, no casings, rolled into bite-sized balls

1/4 cup red or yellow onion

2 cloves garlic, finely chopped

1 stalk celery, finely chopped

1/2 cup whole wheat orzo pasta

1.5 cups reduced-sodium chicken broth

1.5 cups water
-
15 oz can diced tomatoes

1/2 tablespoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

Cook Time: 25 minutes
Total Time: 35 minutes
Yield: 4 servings
Directions

In a large soup pot on medium-high flame, heat olive oil for 1-2 minutes.

Add sausage pieces and sauté until lightly browned; transfer cooked pieces to a plate and set aside.

To the heated, oiled pan, add onion, garlic, and celery; sauté until fragrant and slightly tender, stirring often for 4-5 minutes.

Add orzo; sauté to lightly brown, 2-3 minutes.

Add chicken broth, diced tomatoes (with their juice), Italian seasoning, salt and pepper.

Bring to a boil; continue boiling until pasta is cooked through (about 10 mins.); add sausage back to pot about halfway through the boiling process.
