Mini Brunch Quiches

These quiches whip up in no time at all, and are a fun finger food to feed any brunch or gameday crowd!

Ingredients

  1.  6 slices bacon, cooked and crumbled

  2.  5 eggs

  3.  2 cups sharp cheddar cheese, shredded

  4.  1 cup Bisquick baking mix

  5.  1/4 cup sour cream

  6.  1 tablespoon fresh chives, chopped

  7.  Dash of Tabasco sauce

  8.  Garlic salt and fresh ground black pepper to taste

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

​

Yield: 24 servings

Directions

  • Preheat oven to 350 degrees.

  • Coat a mini muffin tin (24 count) well with Pam cooking spray

  • In a large bowl, beat eggs with a whisk.

  • Stir in Bisquick and sour cream.

  • Add bacon crumbles, cheese, chives, Tabasco, garlic salt and pepper.

  • Spoon evenly into prepared mini muffin tin.

  • Bake 15-20 minutes, until the tops are lightly browned.

  • Allow to cool in pan for 5 minutes, then carefully remove with a small knife or fork.
