Mini Brunch Quiches
These quiches whip up in no time at all, and are a fun finger food to feed any brunch or gameday crowd!
Ingredients

6 slices bacon, cooked and crumbled

5 eggs

2 cups sharp cheddar cheese, shredded

1 cup Bisquick baking mix

1/4 cup sour cream
-
1 tablespoon fresh chives, chopped

Dash of Tabasco sauce

Garlic salt and fresh ground black pepper to taste

Directions

Preheat oven to 350 degrees.

Coat a mini muffin tin (24 count) well with Pam cooking spray

In a large bowl, beat eggs with a whisk.

Stir in Bisquick and sour cream.

Add bacon crumbles, cheese, chives, Tabasco, garlic salt and pepper.

Spoon evenly into prepared mini muffin tin.

Bake 15-20 minutes, until the tops are lightly browned.

Allow to cool in pan for 5 minutes, then carefully remove with a small knife or fork.
