Black Bean Soup

This black bean soup is full of flavor and depth. Loaded with veggies, proteins, and greatness!

Ingredients

  1. 2 tablespoons olive oil

  2. 1 yellow onion - chopped

  3. 1 red bell pepper - chopped

  4. 1/2 green pepper - chopped

  5. 1 jalapeno, seeded and minced

  6. 5 cloves garlic

  7. 2/3 cup chopped ham

  8. 3 (14.5 oz.) cans black beans

  9. 1 (14.5 oz.) can diced tomatoes with chiles

  10. 2 (14.5 oz.) cans chicken broth

  11. 3 tsp cumin

  12. 2 tsp coriander

  13. 1/2 tsp each - chili powder, garlic powder, salt, pepper

  14. 1/4 tsp cayenne pepper

  15. 1/4 tsp black pepper

  16. 1 tsp apple cider vinegar

  17. 1 tsp hot sauce - you choose

  18. 1 lime - juiced

  19. 2 bay leaves

  20. 1 tablespoon cilantro - chopped

  21. GARNISHES - Optional

  22. sour cream

  23. cilantro

  24. jalapeno slices

  25. lime wedges

  26. grated cheese

Prep Time: 15 minutes

Cook Time: 1 hour 15 minutes

Total Time: 1 hour 30 minutes

Yield: 6 Servings

Directions

  • In a large stockpot or Dutch oven, sauté onion, garlic, bell peppers and jalapeno in olive oil over medium heat.

  • Add the chopped ham, black beans tomatoes/chiles, chicken broth, cumin, coriander, chili powder, garlic powder, salt, pepper, cayenne pepper, apple cider vinegar, hot sauce, lime juice, bay leaves and cilantro.

  • Bring mixture to a boil, then reduce heat to simmer and cover. Cook for roughly 1 hour (or more if you have time) until beans are tender. Remove bay leaves and serve.

  • OPTIONAL - place soup into an immersion blender or standard blender for a thicker stock. Not Required.
